Production
We create our menus and cocktail pieces to order in our state-of-the-art production laboratory. We are capable of producing between 5,000 and 10,000 cocktail pieces per day under optimal conditions, thanks to the consistent reliability that defines Marie Julien Cuisine.
Since our inception, customer satisfaction has been our priority, and we place great importance on adhering to current regulations. Our Quality Manager ensures daily compliance with European hygiene and food safety regulations (Hygiene Package). We apply the HACCP (Hazard Analysis Critical Control Point) method to control the critical points of our operations, from sourcing raw materials to the delivery of finished products to our clients.
The Cold Chain
To ensure the quality of our products while maintaining the cold chain, we have equipped our entire laboratory with a temperature control software called “e-pack pro” This software is a temperature monitoring and tracking platform that detects any anomalies in real-time and alerts the relevant operators, while recording the collected data. Thanks to this tool, we can maintain computerized traceability of all our products, from farm to plate.
We have extended this principle to our fleet of vehicles by equipping them with a temperature tracking system.

To achieve this, we adopt a rigorous approach in selecting our suppliers, evaluating the quality of their products and services, as well as their compliance with food hygiene regulations.
