Our Philosophy

Our work begins with understanding you and analyzing your desires. This allows us to unleash our creativity in fulfilling your most gourmet wishes while preserving the authenticity of our fresh, seasonal ingredients.

 

Our tailor-made menus are crafted using seasonal products from local sources, prioritizing organic ingredients and responsible farming and fishing practices. Driven by creativity and passion, our team continuously reinvents its cuisine by exploring unique flavor combinations.

Our Work

Highly attentive to fair and sustainable production methods, we ensure that our products and their packaging are part of a responsible recycling process. Our suppliers deliver using biodegradable, 100% recyclable, or reusable packaging—such as our Castalie glass water bottles and all our cocktail bite containers woven from sugarcane fiber.

 

Furthermore, we upcycle our organic waste (oyster shells, peelings, sugarcane fiber packaging…) by partnering with “Les Alchimistes”, who transform it into compost and then into soil, supporting organic farming.

 

These values guide our choice of suppliers, ensuring they share our commitment to sustainability and responsible practices.
